Liberian Collard Greens

Liberian Collard Greens


  • 2 or 3 bunches greens
  • 2 big onions
  • Vegetable oil
  • Fresh chicken, cut
  • Nice big piece of beef, cut
  • Sm. can tomato sauce
  • Onion, mushroom soup mix
  • 2 tbsp. soup sauce


Wash the greens thoroughly and cut them on cutting board. Cut the greens
in cross section so that the stems are 1/4 inch long. Peel the onions and
cut them in small cubes. Add them to the greens and mix them up like a
salad. Heat 1/4 to 1/2 cup vegetable oil in aluminum pot until oil is hot
(pan with cover). Add greens and stir. Turn heat down to medium and cook
for 30 minutes with cover.

Add hot water (1/2 cup) to soup mix and add to greens while still cooking
on medium heat. Cut chicken and beef into small chunks (pieces). Heat
small amount vegetable oil and add beef and chicken. Cook for 30 minutes
and then add cooked greens. Open can of tomato sauce and add to greens.
Cook on low heat for 30 minutes while you stir gently.

This prepared green mixture can be put on cooked rice or as a side dish of
vegetable to go with food items.
